

Collard Greens (above) and Beet Greens
As of late, these two leafy greens have been high on my have to eat list. You may or may not like leafy greens but I seem to think they are the only vegetables necessary, along with the root veggies like rutabaga, beets, radishes, etc. I'm not a big broccoli fan (which is a leafy green) nor that much of other veggies like broccoli such as cauliflower. I have grown to love leafy greens and I have tried my fair share.
I have tried Kale, Red Kale, Dinosaur Kale, Collard Greens, Mustard Greens, Dandelion Greens, Red Swiss Chard, Rainbow Chard, and your Spinach varieties. Out of all these, you can't go wrong with Kale and Dandelion greens are really bitter which is a huge turnoff for most. Other than that, I really like collard greens, and the greens atop beets.
Collard greens are really easy to cook for lunch meals if you have access to a microwave. The heat does kill some of the nutrients such as Vitamin C but the greens are so packed with nutrients, I am willing to bypass this because they taste much better heated up a bit. I only eat Organic by the way. I would dare touch the other stuff. Anyways, dip the greens in a bowl of water a few times and then rinse off under water. Remove the bottom stem from the leaf and then tear the thing apart and put in a microwave safe bowl. Run for about a minute or so and viola, you're ready to go. It's really amazing.
You can also do this with beet greens. Beet greens taste a bit like spinach but better. Just the other night, Crystal stovetop cooked them with some mushrooms. Use a bit of coconut oil or pastured butter and saute until soft bug don't overcook, you may not like the result.
In any case, you must be trying different vegetables because they are one of the most important things in your diet. If you feel you don't like them, keep searching because in the end, they are key to health and vitality. You know that whole apple a day saying? It holds true with dark, leafy veggies. Eat as much as you can and watch the pounds melt away, the energy go up, and the sickness stay away. This paired up with healthy animal meats and solid sources of dietary fat and you are well on your way to superhealth.
Meat is king (grass-fed anyways) but the veggies are pretty much on the same level. You gotta do it. Stop making excuses.

Also, if you haven't seen Food, Inc., you need to get on the ball and watch it. It is a very real depiction of our food supply. Naysayers say what you will but this is for real. Some of it may be overblown but this is how our food is grown and brought to the general public. It is disgusting and despicable.

Fathead is another good movie. Talks about how sugar and enriched flour is what is killing people...not fat.
