
My first post following our sit down this past Saturday is about relapse. First off, it is very hard for some people to get the ball of change rolling. I feel that this is the hardest thing for most people because it can seem overwhelming and not everyone really knows where to begin change. I, hopefully, have given you a starting point. Begin with your protein and go next to fat. Begin with food quality. The higher up the line you choose to be, the better the results will be. Every choice in front of you can be placed on this so called line I have used as a metaphor.
For instance, red meat on this line can be placed in order of:
Pasture raised, Grass-Fed Beef
Very lean cuts of grain fed beef or what you buy at Hy-Vee
Lean cuts of grain fed beef
Fatty cuts of grain fed beef
So as you can see from this line, you need to ingest at least 1 gram of protein per pound of body-weight per day and it can come from red meat, or more specifically, any of the above mentioned red meat sources. You need to eat protein. The thing is, the higher on the line, the better, faster the results. Every thing you can eat can be placed on a similar line. You just have to use common sense or at least use the common sense to ask me or someone else.
Similarly, for vegetables:
Locally grown, in-season, organic vegetables
locally grown, in-season vegetables
In-season, organic vegetables
In-season vegetables
Vegetables of any kind
Just know that there is a difference. But also know that if you aren't eating vegetables, by eating them, even the bottom of the line, you will see results, dramatic results. I'm just saying that the higher up the line, the better, faster the results. You will notice that I don't have the money to go and buy everything at the top of the line and I don't. I just make sure I am eating from the line. Does that make sense? The quality is so important but just the fact that you are eating from the lines I have put in front of you is so much more important.
The last thing is days where everything goes to shit. Like Friday night and the whole weekend. After the pizza, it all went down hill for me. I felt like crap on Saturday morning and haven't felt all that well this whole weekend. I made excuses every time it came time to eat. Big gut bomb. The thing is, even after two full days of eating terribly, I know that I can get right back on the saddle and attack my nutrition with even more aggression. I love feeling awesome, energized, alert, and strong. Having my eating on track provides me with this.
When I eat without control, I become lethargic, weak feeling, angry, i get headaches, etc. This is because, when you get of the so called crack, your body starts to heal from the inside out. As much as it can with the foods I am eating at least. This makes me more sensitive to gut irritants, and insulin. I feel really bad. This is motivation though.
I am ready to get back on track. Crystal and I went shopping at Costco and got some groceries. We purchased, organic spinach, avocados, frozen strawberries, asparagus, mini sweet peppers, red bell peppers, un-frozen chicken breasts, a few different selections of steak, a couple of dozen eggs from cage free hens that have eaten organic feed (prettied up word for organic grain. Unless the chickens are allowed to actually roam free and eat as much grass, bugs, etc as they want as well as having their diets supplemented with animal protein, usually from fish (chickens are omnivores just like humans), you can't be sure. We need to buy some more fat sources but what we bought should last us through the week if meals are planned properly. Proper planning is the key. I am really excited to get back on track and I hope those of you that are attempting the challenge are too.
I am here for you so utilize my knowledge. Post questions to comments. Ask me through email. I will answer. We will all struggle at one time or another but it is where we go after we break down that is important.

It might just be to stop the spread of disease. If you are sick such as having diabetes or a whole host of other auto-immune problems, this challenge may be for you. I am not guaranteeing anything as I am not a doctor or dietitian (I have to say this mumbo jumbo because of legal reasons) but this is the nutritional way for you.

Yes, if you made it to one of the nutrition sit downs, it covers your entry fee.

Hey ricky,
One thing I forgot to ask at the seminar was about spices and seasoning. The info didn't say anything about them as far as banning or eating salts and peppers. Which spices/seasonings would follow paleo the best for adding on top of meats and such.

It will be the spices and seasonings that will keep you going strong throughout this whole challenge. I would recommend you use unmixed spices and seasoning to begin with and make your own mixtures. For instance, instead of getting old bay, try taking garlic powder, cumin, basil, etc. and creating your own seasoning and if it is awesome, share it with the rest of us.

I just got off the phone with my mom and she informed me that one of my cousins (late 20's) has been feeling like crap for about 5-6 yrs.....sick all the time with countless sinus infections, zero energy, super bad breath, chronic diarrhea just to name a few. In the past few years he had developed numbness and tingling in his arms and legs. After consulting numerous doctors one finally concluded that he is allergic to gluten, dairy, and sugars. They put him on a detox diet for 3 months with eating only meat and veggies then eventually adding fruit slowly. HMMMMM.....does this diet sound familiar???? He has been on this diet for 3 wks and has already had relief of ALL symptoms and feels better than he did in high school!
This diet has changed his quality of life considerably!!! If it changed his life...I know it can change mine and yours! Let's do this together! I guarantee it will be well worth it!

I understand that local, organic meat is the ideal. How does buying deli meat work here? I know it isn't local or organic but if I am in a pinch how does that fit in?

Watch out for nitrates, preservatives and salts in deli meats.
That being said, deli meats are kinda pricey. If you're looking at a cheaper solution, find a 1 or 2 pound cut of ham, turkey or chicken. Then have the deli section slice it for you. Bring it home and bag it into convenient amounts and freeze some for later.
As far as salts go, it's my understanding that the hardline paleo types eliminate it altogether. Most of the blogs, etc. that I read, though, do use sea salt. I would imagine that since you are eliminating processed foods, thereby eliminating all the added salts and other junk, that the reasonable amounts of salt (preferably sea salt) you would use in cooking isn't going to be enough to be a problem.
